Who doesn't like tacos? No one I know.
This recipe was inspired by the simplicity I found in those juicy steak tacos I made from my Pepper Leaf meal-delivery-box-thing (you can find the video here). They were so easy to make and I felt like they had just the right amount of veg to make me feel "healthier" without compromising on flavour.
Look I don't want to taco much about them, let's dive right into the recipe.
Chicken Tacos
You’ll Need
4 medium sized wraps
1 medium carrot
1 capsicum
1 cucumber

1 lime
Salt and pepper
Olive oil (or your choice of cooking oil)
Prep
Season chicken with salt and pepper, set aside in the fridge.
Cut carrot and carrot into matchstick sized pieces
Thinly slice cucumber or use a peeler and peel strips
Wash and drain rocket
Slice or smash your avocado, whichever you prefer
Cook
Lightly coat the chicken in oil and sprinkle with guacamole seasoning.
Heat a pan on medium heat, cook chicken until cooked through.
Place carrot, cucumber, capsicum and rocket into wraps.
Top with chicken and avocado.
Serve with lime wedges
Alternatives

No ripe avos? Try aioli instead!
