Chicken Tacos

Who doesn't like tacos? No one I know.


This recipe was inspired by the simplicity I found in those juicy steak tacos I made from my Pepper Leaf meal-delivery-box-thing (you can find the video here). They were so easy to make and I felt like they had just the right amount of veg to make me feel "healthier" without compromising on flavour.





Look I don't want to taco much about them, let's dive right into the recipe.


Chicken Tacos


You’ll Need

4 medium sized wraps

1 medium carrot

1 capsicum

1 cucumber

80g rocket (2 handfuls)

1 avocado

2 chicken thighs

Guacamole seasoning (or mix cumin, paprika, salt and pepper)

1 lime

Salt and pepper

Olive oil (or your choice of cooking oil)


Prep

  • Season chicken with salt and pepper, set aside in the fridge.

  • Cut carrot and carrot into matchstick sized pieces

  • Thinly slice cucumber or use a peeler and peel strips

  • Wash and drain rocket

  • Slice or smash your avocado, whichever you prefer


Cook

  1. Lightly coat the chicken in oil and sprinkle with guacamole seasoning.

  2. Heat a pan on medium heat, cook chicken until cooked through.

  3. Place carrot, cucumber, capsicum and rocket into wraps.

  4. Top with chicken and avocado.

  5. Serve with lime wedges


Alternatives

  • Add cheese if you’re a cheese fan

  • No ripe avos? Try aioli instead!

  • Add tang and crunch with a quick pickle red onion!
