My apologies to any of my male friends out there who can't relate to the story I'm about to tell but it's one that needs to be told.
Ladies, it was that time of the month so I planned to take a day of rest. I set myself up on my couch with a home made blanket, hot water bottle and a trashy but "oh so good" rom com. Then in true Gen-Y fashion I proceeded to scroll the socials, switching between instagram, pinterest and Deliveroo. See I was peak hormonal, which means I was hungry for everything "bad" (I use inverted commas here because I don't really like labelling my food as good or bad, it just is, but for this instance I am). I was craving chips and for those of you who watched my stories on that day you'll have noticed that I went on a bit of a rant about who had better chips, KFC or Red Rooster. Red Rooster is the obvious winner.
In true S style, I decided that instead of wasting my money I probably had the ability to make the chicken and chips that resembled my fav takeaway chains. Here is the result.
**So you guys are fully aware I have a mini Kmart oven that is a cross between a convection oven, dehydrator and air fryer. I googled the difference between air fryers and ovens and apparently air fryers don't have an element that produces the heat. My mini oven does SO I don't know how this will work in your normal oven but if you try it PLEASE shoot me a message and let me know!
Let's make KFC style HCC!
What you'll need
Chicken (I used the thigh peices, you could use drums or both or strips or whatever you've got.)
Seasoning Flour (basic ratios)
1/2 cup plain flour
4 tsp paprika
2 tsp garlic powder
2 tsp mustard powder
1 tsp flakey salt (if you use fine salt use less)
1/2 tsp oregano
1/2 tsp cracked black pepper (you can use white pepper if you like or a mix of both)
*Add Thyme if you have it as well, same amount as the oregano.
Spray oil or normal oil (I used olive oil, use whatever you've got)
What to do
1. Season your chicken peices with salt and set to the side (in the fridge).
2. Pre-heat oven to 180*C with a drip tray at the bottom.
3. Set up your dregding station with the seasoned flour and a bowl of water.
4. Get a wire rack ready to the side
5. Dip chicken pieces in the seasoned flour. You want to make sure you get flour all over it but also tap off the excess.
6. Dip chicken into the water, let drip then dip back into the flour again full coating.
7. Place chicken on a plate and spray or coat lightly with oil all over (don't forget underneath).
8. Place chicken on wire rack and into the pre-heated oven for 25-30mins depending.
9. Cut open chicken to check if it is cooked or use a thermometer to check if it reads above 65*C when inserted into the chicken closest to the bone.
10. Enjoy with your choice of sides, I made chips with mine or you could have mashed potato and gravy with a soft dinner roll *drool*.
